Quick Meals

I thought that having a thread for quick and easy meals would be good as it's hard to get time to prepare healthy meals for our kids.

This can be used for pasta, bolognese and chillis.

1 large onion
2 or 3 cloves of garlic
1 red and one green pepper
6 mushrooms ( I use closed cup but any are good )
2 sticks of celery
1 tin chopped tomatoes
1 vegtable stock cube
A table spoon of mixed herbs and the same of oil
2 table spoons of tomato puree ( you can use garlic puree as well if you want )
Some hot water

Method

Chop all the veg and fry in a pot with the oil.
After a few minutes, add the tomatoes, the puree and the herbs.
Add the hot water until it it just covering all the veg.
Leave to simmer for about 20 minutes.
Using a blender, blitz it until it is smooth.


You can add any other veg that you like and adjust quantities to tast. The sauce is good to freeze for a month or so, either that or pop it in the fridge for a couple of days.
